A Bit Of History :
Quetsche Tilquin à l'ancienne (6.4% alc/vol) is a spontaneous fermentation beer made from the fermentation of fresh and pitted plums (Prune de Namur or Quetsche véritable d'Alsace variety, of the simple altesse type) in a blend of 1, 2 and 3 year old lambics for a period of 4 months. Unfiltered and unpasteurized, it is refermented in the bottle for a minimum of 3 months. The lambics used are fermented and matured in oak barrels in our facilities. They are made from mash brewed by the Boon, Lindemans, Girardin and Cantillon breweries.
The taste is sweet and sour but has a fruity and round side that makes this Oude Questche more accessible perhaps for the non connoisseur. It also has a slight dryness from the plum skin. On the nose, one perceives a scent of plum alcohol.
