A Bit Of History :
The specific taste of Timmermans Oude Gueuze comes from its traditional preparation according to the rules of art. It is a mixture of old lambic, matured for 3 years in wooden barrels, and young lambic that ferments spontaneously in the bottle. The different lambics are carefully selected by the brewer to obtain a perfect taste. After production, Timmermans Oude Gueuze is refermented for four months in the bottle and continues to improve for 20 years.
A fascinating discovery of the world of Brettanomyces, the name given to the wild yeasts of spontaneous fermentation and the basis of the legendary lambics of the Senne Valley. This little marvel of acidic flavor will tame you by its gustatory subtlety in which lambic never rhymes with sourness, combining a wild and fresh aroma with a taste completely emancipated from the moment of its introduction, leaving the palate with a taste of veracity while keeping the mystery of the Brussels gueuzes intact.
